Market day experience
Posted on August 17th, 2009 4 comments
I received a call from a young lady saying she had just got engaged, and would like to treat her future husband with a little gift. I passed a few ideas around and we came up with a day at the market.Miss Schmitt loved their idea as her close friend was coming to visit her from Germany, and would love me to show them all around Borough Market.
After we walked around and sampled some of the great food at the market we decided on what we were going to cook that evening and went to buy all the fresh ingredients. The only thing we did not get was the wine as I already had a few bottles of Ken Forrester’s 2007 FMC.
After a fantastic day at the market we then headed home to start putting our menu together.
We started off with a grilled vegetable salad with goat’s cheese. Mains, was pan-fried watermelon with cod and a hollandaise sauce and seasonal vegetables. For dessert we made a lovely mango compote and served that with a passion fruit sorbet.
The day was a great success and everybody enjoyed cooking the fresh food from the market.

Spencer, I am very happy that I followed the advice of one of my friends who recommended you in helping us create a lovely day out and a marvellous meal. My fiancé and my close friend from Germany just loved walking through the market with you. I hope we did not ask too many questions.
We enjoyed your knowledge about the fresh food and especially your mouth watering cooking secrets. It was so much fun having you over. Thanks for the brilliant and unforgettable day! Katrin -

If this is what being the sister-in-law is going to be like then I could get used to this
. Going to Borough Market is normally entertaining and filling but going with a chef ups the ante. Spencer navigated us through the market but still let us drift off to nimble away at the chocolate brownies. We decided on a menu based on what produce we liked and Spencer was imaginative in his recipes. Who would ever think of a watermelon with fish? I suppose that is why he is the chef and we were the little helpers. The evening was highly entertaining and we were all involved in the process. I felt a huge sense of accomplishment on looking at our meal as I learnt something new and some tricks in the kitchen while having fun. I highly recommend Spencer because he knows what he is talking about, is passionate about his food and there is no pressure if you don’t do things correctly. He shows you how to fix things if you get it wrong. All in all a great night in and it made my brothers engagement even more memorable.

This day with Spencer was one of the absolute Highlights during my visit in London. What a marvelous idea to spend a day like this! Experiencing the incredible variety of Borough Market with a creative and devoted Chef Cook like Spencer was really great!
and it all got best, when we were finally learning how to cook and be creative with combinations of watermelon and fish! WOW!
I really learned eating is not just eating- it is enjoying every single step, that finally leads to it. Buying, preparing, cooking, eating and enjoying everything!
Thanks for that, Spencer!
